Single boiler system is probably the most basic option available, with a separate
brewing and steaming modeon the same machine.Typically, the steaming is done
first as it requires a much higher temperature. There are several downsides to
this system, most notably frequent delays for cooling down between shots which
makes it difficult to offer a larger number of drinks.
A Heat Exchange System, while also only having
a single boiler, contains a secondary tube inside the boiler that is used to
heat the water to the correct temperature as it is delivered through the
superheated steam.Although an improvement over the single boiler system in
terms of costs and variety, any change in the steam pressure will affect the
water temperature.
All round, the most likely option for a café
that is going to be serving multiple cups of various beverages in a day will be
a double or multi boiler system.The water is always served at the correct
temperature from one boiler while the steam is on tap in a second boiler, to
deliver the perfect cup of brew every time.
Cleanliness
Just as with everything else in your café, your
automatic coffee machine will need regular cleaning.It makes sense, therefore,
to select a machine that isn’t inflicted with a multitude of fiddly parts that
may look impressive but are difficult to remove for cleaning.You don’t want
your staff to resort to short cuts out of frustration; this will lead to bad
tasting beverages and unhappy customers.
You will also need to take into account the
type of water available in your area.Hard water has a tendency to build scale
in coffee machines due to the calcium and magnesium salts in the water
so your filters will need to be inspected and possibly replaced on a regular
basis.
